Do you have a favorite recipe for black-eyed peas that you have actually eaten yourself and that you like very much? I am looking for a vetted recipe so that we can cook and eat black-eyed peas for the first time.
Thank you,
Edward

Cook'em as you like to cook beans or lentils. Be sure not to overcook them into mush. Fresh are better, but dried will do. Your standard mirepoix to start works, salt, black pepper, a couple of green herbs, bay leaf and ham hock or fatback. They're just as easy as pintos, black beans, green, yellow, red or brown lentils. Easy peasy.

You'll find two very good recipes at this link: https://www.pressdemocrat.com/articl...p=all&tc=pgall
One is for Pasta with Black-Eye Peas and the second is for Hoppin' John, traditionally eaten at midnight on New Year's Eve to guarantee good luck in the new year. But you must have greens alongside and the link includes a recipe for those, too.
The recipes have been tested and have enjoyed a long life on my table.
Chef Marcus Samuelsson has a great recipe for Ethiopian-style black-eye peas in his book "The Soul of a New Cuisine." You can find that recipe here: https://www.pressdemocrat.com/articl...p=all&tc=pgall
Several local farmers should have fresh black-eye peas sometime soon.
