Great article on why the low-fat paradigm is not scientifically valid. The only caveat I would add is that quality matters - a lot! Unfiltered extra-virgin olive oil sold in dark containers is health promoting, while any olive oil in clear containers is not (it's rancid!). Similarly, there is a world of difference between butter from organic grass-fed cows and CAFO cows. The grass-fed butter is a beautiful yellow color, while the grain-fed butter is pale and lacking in nutrients. Animal fats from livestock fed a natural diet and with access to fresh air and sunlight will always be better for your health (and the health of the planet).
