In the Ayurvedic practice of medicine, there are six flavors of food: sweet, sour, salty, bitter, pungent, and astringent. Each flavor lends itself to and is reflective of a different part of our digestive tract. Many diets include foods from only a few flavors. An understanding of the six flavors’ healthful subtle actions on the body may help encourage eating a wider variety of foods.
Mary Sheila Gonella, NC, CMT is a Certified Nutrition Consultant. She teaches healthy cooking classes, lectures, and consults with clients one-on-one.
