Cook'em as you like to cook beans or lentils. Be sure not to overcook them into mush. Fresh are better, but dried will do. Your standard mirepoix to start works, salt, black pepper, a couple of green herbs, bay leaf and ham hock or fatback. They're just as easy as pintos, black beans, green, yellow, red or brown lentils. Easy peasy.

One is for Pasta with Black-Eye Peas and the second is for Hoppin' John, traditionally eaten at midnight on New Year's Eve to guarantee good luck in the new year. But you must have greens alongside and the link includes a recipe for those, too.
The recipes have been tested and have enjoyed a long life on my table.
