My favorite is Jill Nussinow's The Veggie Queen. She's local, and the the recipe book features seasonal fresh vegetables. I've tried and enjoyed many of the recipes. Try her black bean and sweet potato chili, made in a pressure cooker. Delicious, substantial, satisfying!

About Jillhttps://ih.constantcontact.com/fs006/1101076301064/img/60.jpgI wear many hats but they're all related to great food that includes vegetables and other plant based cuisine. I'm a vegetable and plant-food cooking expert, in vegetarian, vegan and gluten-free eating. I also specialize in teaching people how to make great "fast food" in the pressure cooker. Don't worry about me turning you into a vegetarian; you have to do that on your own time. I just want to help you get more vegetables and plant foods into your diet, no matter what other foods you choose to eat. I want you to eat so that you feel healthy and energetic.

I love this time of year, as some of you already know. I have eaten my first spring asparagus , green garlic and artichokes (see my You Tube video for how to pressure cook artichokes) (https://r20.rs6.net/tn.jsp?e=00152x_06NrBkljEQ2DBZ1Z4ucM4LqOprqZ9WCcvLhJe_3TvZBHVsbDyg3fr4b6ZIiezMvbSbOqnzuUal5GnXapcf5A4rqMbzaYz_yWoalBJFgMly08kNkvX5liMAQXh83yVSoxCctvM0 loKoSvG2DhZK0iklIwmWmScE1-OOZ8lu3M4vphqjwkqG9kEPnFe-5USx6pECbtkS4=). This means that peas aren't far behind. Do you get the feeling that I figure out which season it is by looking at the vegetables that are fresh? Yes, it's true. I hope that whatever spring veggies you have right now that you enjoy them wholeheartedly.
. Wishing you Happy Spring and a wonderful day - always.
