advice for growing ginger root houseplanti

I have a commercial ginger root/ rhizome from the grocery store that has sprouted on my kitchen counter and looks like it is growing a shoot. Anyone out there have experience of how to grow this into a healthy house plant? Do I plant the ginger rhizome in sand? Potting soil or perlite? Cover it in soil or just lay the rhizome horizontally part way or totally on top of the soil? Would appreciate some advice from anyone who has grown ginger this way Thanks much! 707 824-8226
