View Full Version : Cooking w/ sprouted cannellini beans?

Eating properly sprouted beans raw is common but can I cook with them, such as in a stew or a pressure cooker? Are they only meant to be eaten raw? Are cannellini beans no good in a stew once they've been sprouted?

I know that people cook with sprouted lentils but I don't know if this can be done with all legumes. I have eaten different dishes with sprouted lentils.

Hi..my understanding is sprouting beans before cooking increases the nutrition, decreases the carbs and definitely decreases the cooking time.

Just to be sure I checked with the sprouting people and they say:

Best grown in bags, most of these sprouts are ready in 3 to 5 days. Sprouted beans and grains should be used as you would unsprouted, but with less cooking. Although sprouting increases nutrients and digestibility they are still essentially raw and eating large quantities regularly without cooking is not recommended. Smaller beans are easier to digest and can be eaten raw especially if you grow them long, light cooking is still advised for regular, mass consumption.
