Years ago in Manhattan I was given some wine mother, a quite-old strain brought from California that provided me and many friends with our own, homegrown vinegar. When I moved here decades ago, I brought the vinegar with me and now I have neglected it and the mother died.

Does anyone have a blob of the stuff they could give me or sell? Or do you know where I can buy it? I have started a new batch of wine leavings, but it would sour faster with some help.

The Beverage People on Piner Rd. in Santa Rosa had it the last time I was there.

How does vinegar made with a "mother" differ than any other wine/cider left to acidify on its own?

Acetobacter bactera are ubiquitous, and any wine or hard cider left uncovered to the elements will eventually ferment to vinegar.

Have you tried reviving your "mother"? Most bacteria sporulate during non-favorable conditions and revive themselves given favorable conditions.
