My uncle sent this to me and is verified by snopes as TRUE:

I recently made a batch of pancakes for my healthy 14-year-old son, using a mix that was in our pantry. He said that they tasted "funny," but ate them anyway. About 10 minutes later, he began having difficulty breathing and his lips began turning purple. I gave him his allergy pill, had him sit on the sofa and told him to relax. He was wheezing while inhaling and exhaling. My husband, a volunteer Firefighter and EMT, heated up some water, and we had my son lean over the water so the steam could clear his chest and sinuses. Soon, his breathing became more regular and his lips returned to a more normal color.



We checked the date on the box of pancake mix and, to my dismay, found it was very outdated. As a reference librarian at an academic institution, I have the ability to search through many research data bases. I did just that, and found an article the next day that mentioned a 19-year-old male DYING after eating pancakes made with outdated mix.



Apparently, the mold that forms in old pancake mix can be toxic! When we told our friends about my son's close call, we were surprised at the number of people who mentioned that they should check their own pancake mix since they don't use it often, or they had purchased it some time ago. With so many people shopping at warehouse-type stores and buying large sizes of pancake mix, I hope your readers will take the time to check the expiration date on their boxes. Also, beware of outdated Bisquick, cake, brownie and cookie mixes. PASS IT ON! This is TRUE--Check it out at

The main reason to avoid pancake mix and Bisquick is because they taste horrible. I can't imagine what they put into this stuff that makes them produce such horrible baked "goods."

It takes me 5 minutes to make pancakes from scratch. And that includes getting down the nutmeg grinder, cinnamon and chopping walnuts to sprinkle on top. I usually use three kinds of flour too. For most folks, three minutes should be enough.

Outside of that, the notion that "toxic mold" is growing everywhere is just plain nonsense. We breathe in mold spores with every breath as we have since our ancestors developed lungs. Only about 2 in a thousand are "sensitive" to any kind of mold, and most of them to only one kind that doesn't even grow around here in any great quantity (move to the humid Southeast if you want to find toxic mold).

Make your own fresh pancakes from scratch because they taste better.

food banks give out outdated pancake mix. someone with authority should tell them. no one ever believes me about ANYTHING>:hmmm:

Outdated pancake mix isn't dangerous. Moldy pancake mix is dangerous to the under 1% of the population that is allergic to mold even if the product isn't out of date. That means the product needs to be moldy and you need to have an anaphylactic reaction to be harmed.

There has been one death related to this situation so it's nothing to freak out about.

Keep your pancake mix dry and it will be safe even if kept for years, or make your pancakes from scratch and avoid the whole issue.

OK, friends, the tease is over. Here it is:

Jeff's Internationally Famous Pancakes

Basic recipe:

2 cups flour
2 tsp. baking powder
1/2 tsp. sea salt
1 egg
1 1/2 cups milk (more for thinner batter less for thicker)
1/4 cup applesauce

Additions:
wheat flour
oat flour
garbanzo bean flour
chopped walnuts
cinnamon
nutmeg
finely grated zucchini
mashed ripe banana

What I usually do:

I'll use one cup of white flour, 1/2 cup of whole wheat, 1/2 cup of oat flour (just dump oatmeal into a small blade type coffee grinder for a few seconds). Sometimes I'll throw in a 1/4 cup of garbanzo bean flour.

Grate in a third of a zucchini or other summer squash (great for nice moist pancakes), or mash in a banana.

Get your griddle nice and hot! A drop of water should skitter around on top without immediately evaporating. I usually use a cast iron comal with a little butter. If the pancakes burn it's too hot (duh). Turn the pancakes after a lot of bubbles form on surface. Resist the urge to mash them with your spatula! It's not a hamburger!

OK, back to additions. Chop up a handful of walnuts. Have cinnamon and nutmeg grinder handy. Ladle batter onto griddle. Sprinkle a little cinnamon and walnuts over the top of pancakes. Grind just a little nutmeg over each one. Smells great! Tastes better!

Serve with gently warmed real maple syrup and homemade apple butter. Have plenty of steaming hot coffee.

On a cold morning warm the plates beforehand.

They'll be back for more!
