i have a few questions regarding cooking with seaweed-if you add it to soup, do the nutrients from the seaweed cook into the soup, or do you need to actually eat the seaweed to get the benefits? also, does dried seaweed ever go bad (i have some that's several years old)? and, any tips on a good cookbook or website would be much appreciated. thanks, susan

Seaweed is like any other vegetable. When you cook it some of the nutrients end up in the water and some in the seaweed.

If it is kept dry it will keep for years.

An internet search will yield a lot of recipes. Depends upon what you like. I usually throw it into soups and stews or use noiri to make rice balls or sushi.
I used to soak kombu and cut it into one inch squares and deep fry it. Even non seaweed eaters liked it. Probably not the most healthy way to eat it but yummy. It puffs up into little pillows.
