View Full Version : Ridiculously Easy Vegan Butter Recipe

First make homemade cashew cream:
Soak 1/2 cup of cashews for 5 hours. Drain the water off, then blend the cashews with 1/2 cup of fresh water in the blender until it is creamy. Leave it in the blender and add the other ingredients. Blend it all really well.
1 1/2 cups refined melted coconut oil
1/2 cup sunflower oil (less makes it harder)
6 teaspoons lecithin granules OR 2 teaspoons of liquid lecithin
1/2 teaspoon sea salt (more or less to taste)
1 teaspoon vinegar (probably not apple cider vinegar - it might flavor it too much)
Pour it into something. Put it into the refrigerator. It can be frozen but don’t freeze it at first; crystals will form.

Do you have a suggestion for making this with a different nut than cashews? They are not the healthiest choice of nuts. Have you done this recipe with sunflower lecithin? I want to make sure it is non-GMO. What vinegar do you use? Would Manuka organic rice vinegar work in this recipe? How does this recipe compare to to Miyoko VeganButter (which is also delicious)?

Pistachios might work.
They would alter the resulting color, but I don't think the extra fiber would destroy the texture.
Unsure what makes cashews unhealthy tho. You need the fat, it's a butter substitute after all.


Do you have a suggestion for making this with a different nut than cashews? They are not the healthiest choice of nuts....

Cashews are chemically treated in their harvesting process. They can't really be called organic. Like most 'raw' nuts are irradiated (including the organic ones) unless you get them directly from a grower. Someone told me recently that animals will not eat cashews.
It's hard to find organic pistachios but many of them are grown on Indian reservations in the Southwest so they are an American Indian product and therefore not certified organic, probably because of the cost of certification. Does anyone have more information about that?
Green butter sounds fun. Green butter and jam. :)
